Ingredients:
2 lbs baking potatoes, peeled and cut into 1 inch cubes |
1 cup finely chopped onion |
3 tablespoons butter or 3 tablespoons margarine, melted |
1 tablespoon grated fresh lemon rind |
3 tablespoons fresh lemon juice |
1/2 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. Cook potatoes in boiling water to cover 3 minutes; drain well, and set aside. 2. Saute chopped onion in butter in a large skillet over medium heat until tender. 3. Add lemon rind, lemon juice, salt and pepper and stir well. 4. Add potatoes and stir gently to combine. 5. Spoon potato mixture into a lightly greased 11x7 inch baking dish. 6. Bake uncovered at 375 for 50 minutes or until potatoes are lightly browned. |
