Claire Clark from uk.tv made this delicious lemon posset for us. In the colonies we call it pudding. Whatever way...it's yummy and the kids will love it. Ingredients:
refrigeration time 3hrs |
just under 3 c. double (heavy )cream |
5 oz. sugar |
2 large lemons, juice and grated zest |
to serve |
1 large lemon, pared zest only |
Directions:
1. Method 2. Put the double cream in a large pan with the sugar. Bring slowly to the boil and simmer for 3 minutes. Take it off the heat, add the lemon juice and zest and whisk well. 3. Pour into 6 ramekins or fancy dessert glass and refrigerate for 2-3 hours. Sprinkle with the pared lemon zest before serving with shortbread. |
