this is a recipe I tweaked from the net . These are very light textured and moist when warm. At room temp, they get a just bit firm although delicous too. I made these for a ladies lunch and they were well received! Read more ! Ingredients:
3 cups flour |
3 tsp baking powder |
1/2 tsp baking soda |
3 tbs poppy seeds |
1 stick butter softened at room temperature |
3 eggs |
1 cup greek yoghurt, or thick sour cream or quark |
juice and zest of one lemon |
3/4 cup sugar |
1 pkt vanilla sugar ( or 1 or 2 tsp vanilla ) |
glaze |
juice from 1 large lemon |
1 cup granulated sugar |
Directions:
1. Combine dry ingrrdients except for sugar 2. Cream butter and sugar, vanilla sugar than add eggs one at a time. 3. Blend in the lemon juice and zest 4. Add the dry ingredients to the creamed mixture alternately with the yoghurt until everything is well mixed 5. Batter should be thick 6. Spoon batter into paper lined muffin tins almost to the top 7. Bake 400F about 20 to 25 minutes or muffins are lt golden and tested done in center 8. Cool to warm 9. Brush on glaze: mix the sugar and lemon juice together. 10. These are taste best when served warm 11. If room temp, reheat gently in the microwave 12. May be frozen 13. About 12 large , more yield when using smaller muffin tins |
