Lemon Poppy Seed Muffin Tops |

This is a recipe a college friend gave me. I love these things! Full of the good ol college days memories. I hope you enjoy! Ingredients:
3/4 cup all-purpose flour |
1/4 cup sugar |
2 tsp baking powder |
1 tsp poppy seed |
1/4 tsp salt |
1/4 tsp cinnamon |
2 tsp grated lemon peel |
3 tbsp shortening |
1/3 cup milk |
1 teaspoon lemon juice |
topping |
2 teaspoons sugar |
dash cinnamon |
Directions:
1. Heat oven to 400F. 2. Combine flour, 1/4-cup sugar, baking powder, poppy seed, salt, 1/4tsp cinnamon and lemon peel; blend well. 3. Using pastry blender or fork, cut in shortening until mix is crumbly. 4. Add mild and lemon juice; stir just until dry ingredients are moistened. 5. Drop dough by tablespoonfuls onto ungreased cookie sheet. 6. In small bowl mix topping ingredients; mix well. 7. Sprinkle evenly over tops. 8. Bake at 400F or 8-13 minutes or until light golden brown. Immediately remove from cookie sheet. 9. Serve warm and... 10. Enjoy! |
