Lemon Poppy Seed Cupcakes |

I got this from a local cookbook and thought it sounded good. So, I'm keeping it here for safekeeping. The yield is guess. Ingredients:
1 (18 ounce) package lemon cake mix |
1/2 cup flour |
3 tablespoons margarine |
2/3 cup water |
1/3 cup oil |
2 eggs |
1 tablespoon poppy seed |
Directions:
1. Mix the cake mix with the flour. Remove 2/3 cup for the streusel top. 2. Add the margarine to the 2/3 cup batter and mix well. 3. Add the rest of the ingredients to the cake mix. Stir by hand until just smooth. 4. Spoon into lined muffin tins 1/2 full. Sprinkle with streusel mix. 5. Bake at 375 degrees for 25-30 minutes. |
