Big lemon flavor...a family favorite! If you can't find a lemon poppyseed cake mix, add 1 T of poppy seeds to a lemon cake mix. Ingredients:
1 lemon poppyseed cake mix |
3/4 cup sugar |
3 tablespoons cornstarch |
1/4 teaspoon salt |
3/4 cup water |
1 tablespoon butter |
1/3 cup lemon juice |
3/4 cup sugar |
1/4 teaspoon cream of tartar |
1 teaspoon vanilla |
3 egg whites |
1/4 cup boiling water |
Directions:
1. Bake cake as directed on package in 9x13. Cool. 2. For Filling: Mix sugar, cornstarch and salt in a small saucepan over medium heat. Add water slowly stirring constantly. Bring mixture to a boil and boil for 1 minute, remove from heat. Stir in butter and lemon juice. Mixture will thicken as it sits. 3. For Frosting: Mix sugar, cream of tartar, vanilla and egg whites in a bowl add boiling water and beat at high speed for 5-7 minutes until fluffy. 4. When cake and filling are cooled top the cake with the filling then frost. 5. * Looks pretty in a glass cake pan*. |
