Lemon Poppy Seed Bread ..oh so Easy |

My mom was a wonderful cook. She has since passed away and this is one of the recipes that brings back warm memories of wonderful times I spent in the kitchen side by side with her. Enjoy. Only 6 ingredients, super easy prep, and delicious. Ingredients:
1 (18 ounce) box yellow cake mix |
1 (3 1/2 ounce) box instant lemon pudding (dry) |
1 cup water |
4 eggs |
3/4 cup vegetable oil or 3/4 cup applesauce |
2 tablespoons poppy seeds |
Directions:
1. Beat all the ingredients EXCEPT the poppy seeds until well blended. 2. Add the poppy seeds and mix well. 3. Bake at 350 degrees in 2 well greased loaf pans for 40 minutes or until a toothpick inserted in the middle comes out clean. 4. Cool on a wire rack. 5. Remove from pan, slice, serve, and enjoy. |
