Lemon poached shrimp with a different sauce having red onion and jalapeno makes for a memorable appetizer. I usually double the sauce recipe. I worry about not having enough! Ingredients:
2 cups dry white wine |
1 cup water |
6 black peppercorns |
2 bay leaves |
1 teaspoon kosher salt |
1 large lemon, halved |
1 1/2 pounds large or jumbo shrimp in shells |
1/2 cup ketchup |
1/2 cup chili sauce |
1/4 cup red onion, minced |
3 tablespoons prepared horseradish |
1 tablespoon lemon juice |
1/8 teaspoon kosher salt |
1/2 teaspoon jalapeno pepper, minced (this can be left out if desired) |
Directions:
1. In large saucepan, combine wine, water, peppercorns, bay leaves and salt. 2. Squeeze in juice from lemon halves and drip rinds into pan. 3. Bring to a boil. 4. Reduce heat and simmer 10 minutes. 5. Add shrimp and poach 4 minutes. 6. Remove from heat and let stand 2 minutes. 7. Drain and cool. 8. Peel shrimp and devein. 9. Meanwhile, while shrimp are cooling, combine remaining ingredients. 10. Cover and chill until serving time or overnight. |
