I found this awhile back on the internet. It's my youngest grandson's favorite. It's a great summertime dessert recipe. It has a freeze time of several hours to overnight that I haven't reflected in the prep or cook time. Ingredients:
1/2 c. sugar |
2 tb cornstarch |
2 c. unsweetened pineapple juice |
3 eggs |
1/3 c. lemon juice |
1 c. blueberries (fresh or frozen), pureed |
Directions:
1. In small saucepan, stir together sugar and cornstarch. Stir in pineapple juice until thoroughly blended. Cook over medium heat, stirring constantly, until mixture boils. 2. Stir a little of the hot mixture into eggs, then stir back into hot mixture. Reduce heat to low and stir until mixture bubbles, about 2 minutes. Stir in lemon juice. Spoon into 6 (6oz.) custard cups or gelatin molds. Freeze several hours or overnight. To serve, spoon about 2 1/2 TB puree onto each plate and gently place unmold frosties in center |
