Lemon-pineapple Cream Dessert |

Prep time does not include chill time, this is for those lemon lovers out there, the pineapple almost makes this taste like little bits of lemon. Enjoy Ingredients:

22 double graham crackers, crushed |
2 tbsp. granulated sugar |
1/2 c. butter, melted |
1/3 c. finely chopped pecans |
filling |
1 (6 oz.) box lemon gelatin |
2 c. boiling liquid (water and pineapple juice) |
3 tbsp. lemon juice |
1 c. granulated sugar |
1 can evaporated milk |
1 can crushed pineapple |
1 (8 oz.) cream cheese, softened |
Directions:
1. Crust: 2. Stir together graham cracker crumbs and sugar. Mix in melted 3. butter, add nuts and mix well. Press mixture firmly in 4. bottom of 12 x 9 x 2 inch baking dish. Reserve 1/2 cup 5. crumb mixture for topping. 6. Filling: 7. Dissolve gelatin in boiling liquid. Add lemon juice and 8. sugar. Chill until mixture thickens the consistency of 9. unbeaten unbeaten egg whites. 10. Beat chilled evaporated milk until stiff. Whip thickened 11. gelatin until fluffy. Combine two mixtures stirring only 12. until blended. Beat cream cheese (softened) until fluffy. 13. Stir in drained pineapple. Fold into gelatin mixture only 14. until well blended. 15. Pour mixture over chilled crust and sprinkle reserved crumbs 16. over top. 17. Allow at least 2 hours to set in refrigerator. 18. Serves 10-12. |
