This makes a lovely filling for homemade lemon pie. Ingredients:
2 cups sugar |
4 tbs. cornstarch |
juice from 2 lemons |
1/8 tsp. salt |
4 egg yolks |
2 cups boiling water |
Directions:
1. Beat all ingredients together, adding 2 cups boiling water. 2. Cook over a double boiler until thickened, stirring occasionally. 3. Note: Save the whites for the mirange. |
