This makes a lovely filling for homemade lemon pie.
Ingredients:
2 cups sugar
4 tbs. cornstarch
juice from 2 lemons
1/8 tsp. salt
4 egg yolks
2 cups boiling water
Directions:
1. Beat all ingredients together, adding 2 cups boiling water.
2. Cook over a double boiler until thickened, stirring occasionally.
3. Note: Save the whites for the mirange.
