lemon Ingredients:
1cup sugar |
1 cup boiling water |
4 tbsp lemon juice |
1 tbsp butter |
2 eggs |
3 tbsp corn starch |
1 lemon rind, grated |
1 baked 8 inch pie shell |
1 7oz jar marshmellow creme |
Directions:
1. mix sugar and cornstarch, add boiling water, stirring constantly. cook for 2 minutes in double boiler. add beaten egg yolks, butter, rind and lemon juice. cook until thick.cool, fill pie shell and top with meringue. brown top in 300 degree -325 oven 2. a meringue 3 egg whites beat egg whites with a dash of salt 3. until soft peaks form,gradually add marshmellow creme, beat until stiff peaks form. |
