The recipe was on the box of pudding mix. It is great. Ingredients:
1 (3 1/2 ounce) package lemon pudding mix |
1/2 cup sugar |
1/4 cup water |
2 egg yolks |
2 cups water |
Directions:
1. Stir mix, sugar, water & egg yolks in medium saucepan. 2. Stir in 2 cups water. 3. Stirring constantly with a wire whisk, cook on medium heat until mixture comes to full boil. 4. Cool for 5 minutes, stirring twice. 5. Pour into a baked & cooled 9 inch pastry crust or crumb crust. 6. Meringue::. 7. Beat 3 egg whites in a large bowl with an electric mixer on high speed until foamy. 8. Gradually add 1/3 cup sugar, beating until stiff peaks form. 9. Spread over filling, sealing to edge of crust. 10. Bake at 350 degrees for 10-15 minutes, or until meringue is lightly browned. 11. Cool at room temperature, for at least 4 hours. |
