Lemon Pepper Shrimp Linguine |

Shrimp linguine flavored with fresh lemon, pepper and garlic. Quick, easy and delicious! Ingredients:
1 (9 ounce) package fresh linguine |
1 tablespoon olive oil |
6 garlic cloves, minced |
3/4 cup chicken broth |
1/3 cup white wine |
1 lemon, juice of |
1/2 teaspoon lemon zest |
salt |
1 teaspoon fresh ground black pepper |
1 lb frozen pre- cooked shrimp |
1/4 cup butter |
1 teaspoon dried parsley |
1 teaspoon dried basil |
shredded parmesan cheese |
Directions:
1. Thaw frozen shrimp in fridge or run under cold water. 2. Bring a large pot of lightly salted water to a boil. Add linguine, and cook for 2 to 3 minutes (according to package); drain. 3. While linguine is cooking, heat oil in a large saucepan over medium heat, and saute garlic about 1 minute. Mix in chicken broth, wine, lemon juice, lemon zest, salt, and pepper. Reduce heat, and simmer until liquid is reduced by about 1/2. 4. Mix shrimp, butter, parsley, and basil into the saucepan. Cook 1 minute, until shrimp is coated and warmed. Stir in the cooked linguine, and continue cooking 2 minutes, until well coated. Sprinkle with parmesan and serve. |
