Ingredients:
25 2-3oz piece(s) chicken diced |
3 cup(s) chicken broth low sodium |
1 1/2 cup(s) chives fine chopped |
1 1/2 cup(s) lemon-pepper spice |
25 piece(s) red lettuce leaves |
25 slice(s) tomato |
Directions:
1. Wash and set aside 25 large red lettuce leaves 2. Set aside 25 1/8 inch tomato slices 3. Dice and cook chicken breast in broth with chives and lemon-pepper spice, sett aside to chill 4. Set one lettuce leaf on plate cupped side up 5. Place one serving of chilled chicken on leaf and add one tomato slice as garnish |
