made this on my own because I was tired of buying lemon-pepper chicken that was neither lemony nor peppery enough for me. The result was a dinner flown blown with taste and bursting of flavor! Ingredients:
4 chicken breast halves, bone-in skin-on (using skin-on really adds a crunch) |
3 lemons |
1/4 cup black pepper |
2 garlic cloves, minced |
2 tablespoons honey |
1 teaspoon salt |
4 tablespoons olive oil |
Directions:
1. Preheat the oven to 400. 2. Cover a glass baking dish with aluminum foil and place the chicken breasts on top. 3. Zest all 3 of the lemons into a small bowl, and then add the juice of 2 of the lemons. 4. add the pepper and all the other ingredients into the bowl. 5. Mix the combine and pour over all the chicken breasts. 6. Bake for 1 hour. 7. Remove from the oven and drizzle with the lemon juice of the last lemon, and a few more grinds from pepper mill. |
