For a satisfying meal, serve tender spears of asparagus with Smoked Salmon Blintzes or Monte Cristo Blintzes. Ingredients:
1 pound asparagus, trimmed |
1/4 cup water |
1 tablespoon light butter |
1/2 teaspoon lemon pepper |
Directions:
1. Spread asparagus in a shallow microwave-safe dish; add water. Microwave at HIGH 3 to 5 minutes or until tender; drain in a colander. Return asparagus to dish; top with butter and lemon pepper. Toss well. |
