I haven't tried this yet but it is from Penzy's magazine and sounds fantastic! Ingredients:
1 lb butter, room temperature |
2 1/4 cups sugar |
6 large eggs |
2 teaspoons lemon extract |
1 teaspoon vanilla extract |
4 cups flour, sifted |
1 tablespoon baking powder |
2 cups pecans, chopped |
1 1/2 cups golden raisins |
Directions:
1. Preheat oven to 350. 2. Cream butter and sugar well. Add eggs, one at a time, mixing well. Add lemon and vanilla extracts along with the eggs. 3. Add flour and baking powder, mixing well after each addition. Stir in the nuts and raisins by hand. 4. Bake in 3 large loaf pans at 350 for 50-55 minutes. The cake is done when a toothpick inserted into the center comes out clean. |
