Lemon Pasta W Asparagus & Pine Nuts |

Another excuse to use your favorite ingredients. Ingredients:
1 lb asparagus |
8 ounces penne or 8 ounces curly pasta |
2 tablespoons olive oil |
4 teaspoons lemon zest |
1/4 cup lemon juice |
salt and pepper |
1 cup chopped roasted red pepper |
6 tablespoons pine nuts |
6 -8 tablespoons parmesan cheese |
Directions:
1. Steam asparagus till crisp yet tender (3-4 min). 2. Cut into 1 lengths. 3. Cook pasta toss with oil. 4. Add asparagus and lemon juice, lemon zest, salt & pepper to taste, and red peppers. 5. Add pine nuts just prior to serving. |
