                    Nothing is easier to make than couscous (except instant oatmeal, or maybe a bowl of cereal, but those don’t really count). This is a fresh, bright and flavorful version that can be served as-is or with additional fruits and vegetables.  Ingredients: 
                    
                        
                                                1 cup chicken broth  |  
                                                1 tablespoon butter  |  
                                                1 cup couscous  |  
                                                1/4 cup packed fresh parsley leaves, minced  |  
                                                juice and zest of 1-2 lemons (depending on size)  |  
                                                salt & pepper to taste  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. In a small heavy saucepan bring the chicken broth and butter to a boil. 2. Add couscous, stir, then remove the pan from heat. 3. Let the mixture stand, covered, for 5 minutes. 4. Fluff it with a fork, then stir in the parsley, lemon juice, and salt and pepper to taste.                              |
