Those lemon pancakes are a stable in our house, I make them at least 2 times a month. They whip up fast and easy, the only fancy thing about them is the beaten egg white. but that makes them so fluffy ... Ingredients:
1 c ap flour |
1/4 c sugar, or less |
1/2 ts salt |
1 c milk |
2 tb butter, melted or oil |
3 egg, separated |
2 lemon, the peel, grated ( i use meyer lemons ) |
1 ts baking powder |
Directions:
1. Beat the egg whites stiff. 2. Mix all dry ingredients, add milk and stir, until smooth. Stir the egg yolks, until smooth, than add, with the butter or oil and the lemon peel to flour/milk mix. Stir, than fold in stiff egg whites. 3. Heat a griddle and bake pancakes. serve with maple syrup and fruit. |
