Quick, easy and tasty. Fresh lemon juice makes a huge difference in quality! Ingredients:
2 large baking potatoes, scrubbed |
1 tablespoon olive oil |
2 tablespoons fresh lemon juice, divided |
1/2 teaspoon dried thyme |
kosher salt |
fresh ground black pepper |
Directions:
1. Preheat oven to 475°F Wrap a baking sheet with aluminum foil and spray with nonstick cooking spray. 2. Cut potatoes into wedges. Combine potatoes with olive oil, 1 tbsp lemon juice, thyme, salt and pepper in a zip top bag. Shake well, then empty onto baking sheet. Spread potatoes out into one layer; keep them from touching as much as possible. 3. Bake in preheated oven 15-20 minutes. Turn pieces over and bake an additional 10 minutes, until crisp and brown on both sides. Sprinkle with remaining tbsp of lemon juice before serving. |
