Ingredients:
2 1/2 cups water |
1 cup orzo pasta |
2 tablespoons oil |
1 teaspoon salt |
1/2 teaspoon paprika (i used sweet) |
1 lemon, zest of |
1 lemon, juice of |
3 tablespoons chopped fresh mint, or |
1 teaspoon dried mint |
2 green onions, chopped |
Directions:
1. In a medium sized pot, bring water to a boil and add the salt, Orzo, paprika. 2. Lower to a simmer and cook, covered,12-15 minutes or until tender,. 3. stirring occasionally. 4. Let cool slightly and then add the mint, lemon zest/juice and green onions. 5. Check for seasoning. 6. Serve. |
