For all the lemon lovers. Ingredients:
1 cup shortening |
1 cup sugar |
4 eggs, separated |
2 cups all-purpose flour |
2 teaspoons baking powder |
1 teaspoon salt |
1/2 cup lemon juice |
2 teaspoon grated lemon rind |
Directions:
1. Cream shortening and sugar until light and fluffy; add egg yolks, beating well. 2. Combine flour, baking powder, and salt; add to creamed mixture alternately with lemon juice, beginning and ending with dry ingredients. 3. Beat well after each addition. 4. Fold stiffly beaten egg whites into batter, and stir in lemon rind. 5. Fill greased muffin cups three-fourths full. 6. Bake at 375 degrees for 20 to 25 minutes or until done. 7. Yield: 1 1/2 dozen muffins. |
