A delicious lemon-oatmeal low- fat muffin. Ingredients:
1 cups flour, all purpose |
1/2 cup wheat flour, whole grain |
1/2 cup oatmeal |
3/4 cup splenda no calorie |
2 tsp baking powder |
1 tsp baking soda |
1/2 tsp salt |
2 eggs |
8 oz. low-fat yogurt |
1/2 tbsp lemon juice |
1/4 cup non fat milk |
1 tablespoon lemon rind |
Directions:
1. 1. 1. Mix flour,sugar,splenda, baking powder, baking soda, and salt together. 2. 2. 2. In a seperate bowl mix eggs, yogurt, milk, lemon juice and lemon rind together. 3. 3. 3. Pour egg mixture over dry ingredients and mix together until just blended. DO NOT OVER MIX!!!! 4. 4. 4. Spoon into 12 muffin cup that have either beeen sprayed or have liners. 5. 5. 5. Bake at 400 for 15 minutes or until done. |
