French-cut lamb chops have the meat and fat trimmed away from the end of the bone. Ingredients:
1/4 cup chopped fresh mint |
1 tablespoon grated lemon rind |
2 teaspoons minced garlic |
2 teaspoons olive oil |
1/2 teaspoon salt |
1/4 teaspoon freshly ground black pepper |
8 (3-ounce) french-cut lean lamb rib chops, trimmed |
Directions:
1. Prepare grill. 2. Combine first 6 ingredients; divide mixture in half. Pat half of mixture evenly on both sides of lamb. Set aside remaining mixture. 3. Place lamb on grill rack. Cover and grill 4 minutes on each side or until desired degree of doneness. Sprinkle reserved mint mixture evenly over lamb; let stand 3 minutes. |
