I got this off a baking board. It's a chilled cake and a browned meringue topping. Tart, sweet and delicious Ingredients:
1 1/4 cups sweet cookie crumbs or graham cracker crumbs |
1/2 cup melted butter |
filling |
2, 8 oz pkg cream cheese softened |
1/2 cup lemon juice |
1 can sweetened condensed milk ( not evaporated ) |
mergingue |
4 egg whites |
1/2 cup sugar |
Directions:
1. Mx biscuit crumbs and melted butter together and press into a 9 inch spring form cake tin . This is not baked. 2. Beat cream cheese until smooth, add lemon juice, condensed milk and beat well, pour into tin with crust, chill very well until firm, at least several hours or overnight. 3. Before serving: 4. Beat egg whites until soft peaks form, gradually add sugar beating well between each addition, 5. Spoon the stiff meringue mixture onto the cheesecake right to the edges, 6. Bake or broil in oven until merigue is golden about 5 to 7 baked or 2 to 3 minutes under broiler , carefully not to burn meringue |
