I made these for a family get-together a couple years ago because there are a few members who are CRAZY about lemons. It is a variation of a recipe from Land O Lakes, a Midwestern dairy producer. The lemon flavor shines through, and the frosting can be varied for either a cream cheese style frosting, or add more lemon for a more intense, tart flavor – whatever floats your boat! Ingredients:

11/4 cups flour |
3/4 cup butter, softened |
1/2 cup cornstarch |
1/3 cup powdered sugar |
1 tablespoon fresh squeezed lemon juice |
1 teaspoon grated lemon peel |
frosting |
3/4 cup powdered sugar |
1/4 cup butter, softened |
1 teaspoon fresh squeezed lemon juice |
1 teaspoon grated lemon peel |
half-and-half, enough to make frosting spreadable |
yellow food coloring, optional (it is pretty to tint the frosting a nice lemon-y color!) |
Directions:
1. For the cookie dough, combine all ingredients in a large mixing bowl and beat on low speed until well blended. 2. Divide dough into half, rolling each half into an 8x11/2 inch roll. 3. Wrap each roll in saran and chill 1 hour or more. 4. When ready to bake, cut each roll into 1/4 inch slices; place 2 inches apart on lightly greased cookie sheet. 5. Bake at 350 degrees for 8 to 10 minutes (they will not brown). 6. Cool completely, and remove from the cookie sheet very carefully, as the cookies will break easily – keep the spatula flat as you push it under the cookie to remove it. 7. Frost each cookie and when the frosting has set up, store cookies in a tightly covered container (I usually keep them in the freezer and take them out about 30 minutes before serving). 8. For the frosting, mix ingredients by hand or with mixer, adding enough half-and-half to make it spreadable. 9. Add a couple tablespoons of cream cheese in place of the butter if you like that flavor with your lemon. 10. Add more lemon juice or zest to suit your taste, too! |
