Easy, refreshing dessert Ingredients:
8 oz. mascarpone cheese |
6 oz. cream cheese, softened |
1/4 cup sugar |
1/4 cup sour cream |
1 tbls. lemon rind, finely grated |
1 tsp. vanilla |
1/4 tsp. lemon extract |
1 cup heavy cream, whipped |
1 jar lemon curd or your favorite homemade |
24 vanilla wafer cookies, crushed |
Directions:
1. In mixing bowl, blend with mixer the Mascarpone, cream cheese, sugar, sour cream, lemon rind, vanilla and lemon extracts until smooth
2. Fold in whipped cream
3. In Parfait glasses, layer crushed cookies, curd, then Mascarpone filling, using twice as much filling as crumbs and curd
4. Repeat layers
