An easy, make-ahead dish! Fresh asparagus in a marinade of artichokes, olive oil, pimiento, garlic, and fresh lemon juice. Beautiful presentation with lemon rind strips. Delicious and so impressive! Ingredients:
marinade |
1/2 cup fresh lemon juice |
3 tablespoons olive oil |
2 tablespoons sugar |
1/4 teaspoon salt |
1/4 teaspoon pepper |
1 garlic clove, minced |
1 (14-ounce) can artichoke heart quarters, drained |
1 (4-ounce) jar diced pimiento, drained |
2 pounds fresh asparagus |
garnish with fresh lemon rind strips |
Directions:
1. In a large bowl, whisk together lemon juice, next 5 ingredients 2. Add artichokes quarters and diced pimiento 3. Toss gently 4. Cover and chill overnight 5. Snap off the tough ends of asparagus 6. Cook in boiling salted water to cover for 3 minutes or until crisp-tender 7. Drain asparagus, plunge into ice water to stop the cooking process 8. Place cooked asparagus in a large heavy duty zip-top plastic bag 9. Store overnight in refrigerator, if desired 10. Add asparagus to artichoke mixture 11. Toss gently 12. Cover and chill 2 hours* 13. Garnish with lemon rind strips before serving 14. This dish is beautiful in a white oblong tray or platter 15. *NOTE: Lemon juice tends to discolor and toughen asparagus, so marinating time is limited to 2 hours |
