This is an excellent marinade for chicken, pork, fish and seafood. It can be prepared up to a week in advance if stored in an airtight container in the fridge. Fresh herbs can be added such as tarragon for chicken, rosemary for swordfish, and dill for salmon. Discard marinade after use.
Ingredients:
2 garlic cloves, crushed
1 tablespoon dried thyme or 2 tablespoons fresh thyme, chopped
1 tablespoon sugar
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/2 cup fresh lemon juice (juice of 3 medium lemons)
1/4 cup extra virgin olive oil
Directions:
1. Whisk together all ingredients.
