This is a recipe from my sister-in-law years ago. So many years ago, she's now my ex s.i.l. - LOL Very good and easy too. Ingredients:
1 3/4 cup flour |
1/2 tsp. salt |
1 cup unsalted butter |
2 cups powdered sugar (sifted) |
1 large egg |
1 cup flaked coconut |
1 tbls. lemon zest |
glaze |
2 cups powdered sugar |
1/4 cup lemon juice |
topping |
1 cup sweetened coconut |
Directions:
1. In large bowl cream butter and sugar together 2. Add egg and mix thoroughly 3. Combine flour and salt and add to mixture 4. Add coconut and lemon zest 5. Spread into 9 x 13 baking dish 6. Bake 20-25 minutes at 350* 7. Make glaze and spread over top 8. Sprinkle coconut on top 9. Cut when cooled and enjoy! |
