This is a great side for fish. Ingredients:
8 oz. linguine |
1 tbls. olive oil |
2 tbls. parsley, chopped |
1 tsp. grated lemon peel |
1/2 tsp pepper |
3/4 cup chicken stock or broth |
2 tbls. lemon juice |
2 tsp. cornstarch |
2 tbls. parmesan cheese, grated |
Directions:
1. Cook linguine according to package directions 2. Drain well and put in large bowl 3. Add oil, parsley, lemon peel and pepper 4. Toss to coat 5. In a saucepan, combine chicken stock, lemon juice, and cornstarch and whisk to dissolve cornstarch 6. Bring to a boil, whisking constantly 7. Reduce heat and simmer until thick, about 2 minutes 8. Add pasta to sauce and toss to heat through 9. Transfer back to bowl 10. Sprinkle with parmesan |
