Another commonly requested dessert of mine. These lemony lime bars are so yummy, you cant eat just one. YUM. Ingredients:
crust |
1 cup butter, softened |
1/2 cup confectioners sugar |
2 tsps. grated lime peel (i use 2 whole grated limes) |
1 3/4 cups all-purpose flour |
1/4 tsps salt |
filling |
4 large eggs |
1 1/2 cup sugar |
1/4 cup all-purpose flour |
1/2 tsp. baking powder |
1/3 cup lemon juice |
2 tsps grated lemon peel ( also use 2 whole grated lemons) |
confectioners sugar |
Directions:
1. In a mixing bowl, cream butter and confectioners sugar. 2. Add lime peel; mix well. Combine flour and salt; gradually add to cream mixture. 3. Press into a greased 13in x 9in x 2in baking pan. 4. Bake at 350 for 13-15mins. or just until edges are slightly browned. 5. Meanwhile, in a mixing bowl, beat eggs and sugar. Combine the flour and baking powder. 6. Add to egg mixture with lemon juice and peel; beat until frothy. 7. Pour over hot crust. 8. Bake for 20-25mins or until light golden brown. Cool on wire rack. Dust with confectioners sugar. Cut into squares. Store in refrigerator. 9. **I find that the cooking time varies on both the crust and the filling. It usually takes a few minutes longer than recommended. 10. **The easy way of cutting these bars, refrigerate before cutting. 11. **Also, the recipe serving varies on how big you cut the bars ;o) |
