Ingredients:
1 cup unsalted butter, room temperature |
1/2 cup granulated sugar |
2 cups all-purpose flour |
1/4 teaspoon salt |
4 extra-large eggs, room temperature |
1 2/3 cups granulated sugar |
1 tablespoon grated lemon zest (1-2 lemons) |
1/2 tablespoon grated lime zest (1-2 limes) |
2/3 cup freshly squeezed lemon juice |
2/3 cup all-purpose flour |
Directions:
1. Line a 9x13 pan with foil, leaving an overhang around the edges. Spray the foil. 2. Prepare the crust: Cream the butter and sugar until light. Combine the flour and salt. Add to the butter mixture until just mixed. Dump onto a well-floured board and gather into a ball. Flatten the dough and press it into the prepared pan, covering the bottom and a 1/2-inch edge on all sides. Chill for 30 minutes. 3. Preheat oven to 350°F Bake the crust for 15-20 minutes, until very lightly browned. Allow to cool on a wire rack, leaving the oven on. 4. Prepare the filling: Whisk together the eggs, sugar, zests, juice, and flour. Pour into the crust and bake for 20-25 minutes, until the filling is set. Let cool to room temperature. |
