This is something I have experimented with for ages to try and get it just like the one I had in one of my fave cafes. I think its pretty close, and damn tasty anyway! Great with warmed turkish bread. Ingredients:
100g lentils (green or brown) |
1tbsp olive oil |
2 sticks celery, chopped |
1 onion, diced |
1 litre vegie stock |
1-2 cloves garlic, crushed |
1/4 tsp cumin |
1 green capsicum, diced |
1/2 bunch baby spinach leaves |
salt and pepper to season |
1 lemon, juice and zest |
fresh coriander and/or coriander salt |
natural yoghurt to serve |
Directions:
1. Heat oil in a large pot, saute onion, garlic and celery for approx 4 minutes. Add stock, lemon juice and zest, lentils, cumin and seasoning. Bring to the boil, then lower heat and simmer covered for about 30 minutes. 2. Add capsicum, spinach and more stock if needed. Recover and simmer a further 15-20 minutes. 3. Serve garnished with coriander and/or coriander salt and yoghurt. |
