My Mum has been making this dessert for as long as I can remember. A big hit at parties and a family favourite. Ingredients:
2 (200 g) packets arnott's lattice biscuits |
225 g philadelphia cream cheese |
2 teaspoons vanilla |
225 g butter |
225 g sugar |
4 teaspoons lemon juice |
2 teaspoons gelatin, dissolved in hot water |
Directions:
1. Cream butter, cheese and sugar. Add vanilla, lemon juice and gelatine. 2. Check the taste for lemon and add more accordingly. 3. Line a slice tin with one layer or Lattice biscuits (glazed side down) and spread mixture over them evenly. 4. Place remaining biscuits on top (glazed size up) making sure they are in line with the bottom layer of biscuits. 5. Place tin in the fridge until lemon mixture sets and cut out into individual biscuits (like a sandwich). |
