A loaf cake made with yogurt and both dried and fresh fruit. A slightly exotic twist to a midmorning snack or light dessert. Ingredients:
1/2 c butter |
1/2 c turbinado sugar |
3 eggs |
1/4 tsp vanilla essence |
4 tbsp low-fat lemon flavoured yoghurt |
3/4 c self-raising flour |
2 tbsp milk powder |
1/4 c dried kiwi fruit slices, coarsely chopped |
1 fresh kiwi fruit, peeled and thinly sliced |
Directions:
1. Grease a loaf pan. Preheat oven at 350°F. 2. Beat butter, sugar and vanilla until light and fluffy. 3. Beat in eggs, one at a time, beating well after each addition. 4. Mix in yoghurt. 5. Sift in flour and milk powder and stir in kiwi fruit slices and dried kiwi fruit. 6. Pour batter into prepared loaf pan. 7. Bake 50 minutes. |
