If you love lemon , you will like this recipe. It's not to sweet and not to tart. Ingredients:
4 lemons |
1 1/2 cups water |
4 1/4 cups sugar |
1 (3 ounce) envelope liquid pectin |
Directions:
1. 1 tablespoon finely shredded lemon peel. 2. 3/4 cup lemon juice. 3. Combine lemon peel water and juice for 10 minutes. 4. Strain to remove pulp seeds etc. 5. Measure 2 cups juice. 6. Combine 2 cups juice with sugar. 7. Cook over high heat stirring constantly until mixture comes to a rolling boil that cannot be stirred down. 8. QUICKLY stir in pectin. 9. Return to full rolling boil. 10. Boil for 1 minute. 11. Fill in 4/8 ounce jars leaving 1/2 inch head space. 12. Procecss in a water bath for 5 minutes. |
