This is another one of those recipes that's a winner, Eagle Brand Milk again :) You might want to top this off by putting some cool whip in a pastry bag and with the large star tip decorate with a boarder of whipping cream around the edge of the finished pie. Read more . YUM Ingredients:
8 ounces cream cheese, softened |
1/2 cup sugar |
1 14-ounce can sweetened condensed milk |
1 6-ounce can frozen lemonade concentrate, completely thawed |
8-ounce container whipped topping, thawed, divided |
yellow food coloring (optional) |
1 prepared 9-inch pastry shell (i would use graham cracker crust) |
Directions:
1. Beat the softened cream cheese with an electric mixer, letting 2. the mixer run for 3 or 4 minutes on high speed. It should be 3. fluffy. 4. Lower mixer speed to medium and gradually add the sweetened 5. condensed milk, lemonade concentrate and food coloring 6. (see Note, below). 7. Remove the bowl from the mixer, and gently fold in half of the 8. whipped 9. topping. Reserve remaining half for garnish. 10. Pour filling into a prepared pie shell, and chill for several 11. hours until set. 12. Serve pie with a dollop of whipped topping. 13. Note: You only need 2 or 3 drops of food coloring, if you choose 14. to use it. 15. The result should be pale yellow - not traffic light yellow. |
