Lemon Ice Cream was the only flavor my Grandmother would eat. They no longer make it where we can find it, but this is even BETTER! Ingredients:
2 cups sugar |
2 cups milk |
2 cups half-and-half |
2 teaspoons grated lemon rind |
1 cup fresh lemon juice |
6 drops yellow liquid food coloring |
garnish: fresh mint sprigs |
Directions:
1. Stir together first 6 ingredients in a large bowl. Pour mixture into your ice cream maker and process. Place in freezer to ripen. 2. I have also added eggs and cooked it custard style and frozen, but this is good like it is... 3. If you do not have a ice cream maker: Pour in to a 13x9 pan and freeze then: 4. Process half of mixture in a food processor or blender until smooth. Remove from processor, and set aside. Repeat procedure with remaining mixture. Return all of mixture to pan. 5. Cover and freeze at least 4 hours or until firm. Garnish, if desired. 6. Yield 7. 1 1/2 quarts |
