This is my Grandmothers recipe for lemon ice box pie and it is fantastic!!! Even my Dad, who is not a sweets person, gets super excited when this is served! Ingredients:
crust: 1 1/2 package of graham crackers (nabisco) |
1/4 stick of butter, softened |
filling: 1 can eagle brand condensed milk |
2 egg yolks |
1/2 cup fresh squeezed lemon juice |
top: 3 egg whites |
1/4 tsp creme of tartar |
6 tbsp sugar |
Directions:
1. crush crackers fine in food processor 2. add butter until crackers will hold together 3. flatten crust into pie dish 4. bake at 350 for 8-10 minutes 5. let cool COMPLETELY 6. Mix together ingredients from filling and pour into pie crust 7. for the top, beat egg whites adding sugar a Tbsp at a time 8. beat until stiff enough where they will form peaks and stand 9. brown at 350 for about 15 minutes but WATCH CAREFULLY! 10. CHILL well before serving |
