This is a very nice and refreshing dressing. I have also used this as a marinade for chicken and it was excellent. Enjoy Ingredients:
1/2 teaspoon minced garlic |
1/2 chopped green onion |
1-1/2 teaspoons minced red onion |
1/2 teaspoon minced fresh parsley |
1/2 teaspoon chopped fresh basil |
1-1/2 teaspoons salt |
3/4 teaspoon freshly ground black pepper |
1 teaspoon granulated sugar |
1-1/2 teaspoons dry mustard |
1 egg |
7 tablespoons fresh lemon juice |
1 tablespoon white wine vinegar |
1-1/2 teaspoons honey |
1 cup olive oil |
1 cup vegetable oil |
Directions:
1. Combine garlic, green onion, red onion, parsley and basil in bowl of a food processor. 2. Process until mixture is well combined. 3. Add salt, pepper, sugar and mustard then process again. 4. Add egg, lemon juice, white wine vinegar and honey to bowl of food processor. 5. With motor running add olive and vegetable oils very slowly. 6. The mixture will form an emulsion similar to a thin mayonnaise. 7. Chill until ready to use and store in refrigerator up to one week. |
