Ingredients:
1 lb green beans |
2 fluid ounces water |
2 fluid ounces lemon juice |
4 teaspoons unsalted butter |
1 teaspoon lemon, rind of, grated |
1 teaspoon fresh parsley, chopped |
Directions:
1. Place beans in a steamer basket over boiling water. 2. Cover saucepan and steam 5-7 minutes or until green beans are tender; rinse under cold water and drain. 3. Combine water and lemon juice in a heavy nonstick skillet over medium heat. 4. Simmer 2-3 minutes or until reduced by half; stir in butter. 5. Add green beans and lemon peel; simmer 3-4 minutes or until green beans are heated throughout. 6. Remove from heat; add parsley and salt to taste and toss. |
