A long-standing family favorite that my mom has been making for years. Ingredients:
1 1/2 cups graham cracker crumbs |
1/2 cup white sugar |
1/2 cup butter, melted |
3 large eggs, seperated |
1/2 cup flour |
3/4 cup white sugar |
3 tablespoons cold water |
juice of one lemon |
1 pinch salt |
1 tablespoon white sugar |
Directions:
1. Mix graham cracker crumbs, first amouint of white sugar and butter. Press into 9x9 baking dish, reserving 1 tbsp of crumb mixture. Bake at 350 F for 8-10 minutes. 2. Cook lightly beaten egg YOLKS, flour, second amount of white sugar, water, lemon juice and salt, until thickened. Don't over-thicken as the mixture will become too globby. Spread over crumbs. 3. Beat egg WHITES and third amount of white sugar. When stiff, spread over lemon filling and sprinkle with reserved crumbs. Lightly brown in oven. |
