Lemon Ginger Shrimp Stir Fry |

A stimulating, low-cal stir fry. Ingredients:
3 tbsp soy sauce |
1/4 cup lemon juice |
2 tbsp grated fresh ginger root |
1 tsp olive oil |
2 cups broccoli florets |
1 cup green beans |
1 medium onion, sliced |
1 green pepper, sliced |
1 cup sliced mushrooms |
2 chopped green onions |
4 oz shrimp |
Directions:
1. Mix together the soy sauce, lemon juice, and ginger. Set the shrimp in it and let it marinade for about 30 minutes. 2. Coat a large pan with cooking spray and add the broccoli, onion, and green pepper. Stir frequently, cooking evenly. Add in the shrimp, saving out most the marinade. 3. Add the mushrooms, green beans, and green onions. Continue to stir frequently until the vegetables are cooked but still crunchy. 4. Serve over rice with the rest of the marinade. |
