A super simple dessert. Light and delicious....130 calories a serving. Recipe and photo from a Nabisco cookbook Ingredients:
1 c cold milk (fat free is ok) |
1 pkg (4 oz.) lemon instant pudding |
1 1/2 c thawed light whipped topping |
30 nabisco ginger snaps |
Directions:
1. Pour milk into medium bowl 2. Add dry pudding mix 3. Beat 2 minutes or until well blended 4. Gently stir in whipped topping 5. Spread about 1 1/2 tsp os pudding mixture onto each cookie 6. Begin stacking cookies together, standing on edge on serving platter to make a log 7. Frost with remaining pudding mixture 8. Refrigerate 8 hours or overnight 9. cut diagonally into 12 slices to serve 10. Store remaining cake in refrigerator 11. Note: Be sure to chill at least 8 hours in torder that 12. cookies softer to cakelike texture |
