Lemon-Garlic Glazed Corn on the Cob |

1 tablespoon butter |
1 tablespoon extra virgin olive oil |
2 garlic cloves, minced |
4 ears corn, husked |
1/3 cup water |
2 tablespoons lemon juice, fresh |
14 teaspoons salt |
1/4 teaspoon black pepper, fresh ground |
Directions:
1. Heat butter and oil in large skillet over medium heat. 2. Add garlic and cook, stirring, until fragrant but not browned, about 1 minute. 3. Add corn, water, lemon juice, salt and pepper. 4. Cover and cook, gently shaking pan occasionally to turn cobs for about 5 minutes. 5. Uncover and continue cooking, turrning cobs occasionally, until all but a few tbls of liquid has evaporated. 6. Serve corn drizzled with pan drippings. |
