Lemon Fruit Parfaits

This is an old timey type of lemon parfait....takes time to make it but oh so good....you can use any type of fresh or frozen fruit... or you can use drained fruit cocktail...This is very pretty in a long narrow parfait glass. Read more ..
Ingredients:
1 tablespoon cornstarch
1/2 c sugar
dash of salt
1 1/4 cup milk
1 egg yolk, slightly beaten
2 tablespoon butter
1 teaspoon lemon zest
3 tablespoon fresh lemon juice
2 drops yellow food coloring
mixed fresh fruits or drained can fruit cocktail
vanilla ice cream
Directions:
1. Combine frist 3 ingredients in 1 quart sauce pan; blend in milk.
2. Bring to a boil, stirring constantly; cook and stir for 2 minutes.
3. Remove from heat.
4. Stir a small amount of hot mixture into egg yolk; stir egg yolk into hot mixture.
5. Cook for 1 minute, stirring constantly.
6. Add butter, lemon zest and lemon juice; stir until butter is melted.
7. Stir in food coloring.
8. Chill thoroughly.
9. Arrabge layer of fruit in parfait glass; spoon on lemon sauce.
10. Place ice cream on top of sauce.
11. Repeat layers to fill glass ending with ice cream.
