These cookies have a surprise ingredient with a kick- cayenne pepper! One of the most popular cookies on my Christmas tray! If you're not too keen on the heat, omit the cayenne for nice buttery lemon cookie Ingredients:
2 sticks butter ,room temperature ( margarine will work but isn't nearly as good) |
1/2 cup sugar |
1 egg |
1 tablespoon lemon juice |
2 tablespoons grated lemon peel |
2-1/4 to 2-1/2 cups flour |
1/4 tsp baking powder |
1 tsp cayenne powder |
1/4 tsp salt |
Directions:
1. Preheat oven to 400 degrees. 2. Cream the butter and sugar together until fluffy. 3. Add egg, lemon juice & lemon peel and mix well. 4. Sift or mix the dry ingredients together and stir into the creamed mixture to make a soft dough. 5. Place dough into a cookie press and press onto an ungreased cookie sheet. 6. Bake for 8 minutes or until cookies begin to brown. 7. Alternately the dough can be shaped into a roll on waxed paper, rolled up and frozen until firm. (Use the larger amount of flour for this method) 8. Roll the outside of the roll in colored sugar and slice into thin rounds with a sharp knife. 9. Bake 8 to 10 minutes or until just starting to brown. |
